Hi Pepy, thanks for the tip. I've seen it called white ginger and sand ginger here, too. We normally just call it kencur beacuse we order it in Indonesian or Balinese.

You can make lawar out of loads of kinds of meat. We'll have a veggie version up soon, too. Actually, I could probably write a whole post about all the different kinds of lawar I've tried - everything from duck to snake!

I love lawar but I eat non-pork lawar when I visited Bali last time.

Actually the name of lesser galangal has been misled to kencur for so long. Kencur and lesser galangal are from the same family and quite similar taste/flavour. The proper name for kencur is kaempferia galangal or kencur itself. However it is also known as sand ginger. In Canada where I live now, sand ginger is common to be found at Chinese markets in dried forms.

Hope this helps. Keep up the good work, Wil and Wayan!

Hi Scott. Tsp is teaspoon for the recipes on this site. All the measurements are flexible, though because most Balinese cook to taste rather than with specific measurements.

Hello! After a week in Ubud I've been inspired to cook the - quite simply delicious! - food of Bali. First was the sambal tomat, a hit with all, and tonight this chicken dish. There's a wonderful sambal made with shallots that we had with crispy skin duck, any chance of the recipe? Great site! Cheers :-)
